You will cook delicate dishes, made from fresh, seasonal and quality products :
– jumbo shrimp raviolis with jumbo shrimp sauce, with Espelette pepper (untill the end of the season in October)
OR (at the end of jumbo shrimp season)
– Scallops on a bed of jerusalem artochoke puree, squid ink tiles, and coral emulsion
– Duck breast with Bordelaise sauce, mushroom royale and seasonal vegetables

French gourmet cooking course
French culinary arts entered UNESCO intangible cultural heritage of humanity in 2010. French gastronomy is a senses travel, that anyone can take. You will learn to cook the finest recipes, with fresh, seasonal, and quality products. You will develop fine and delicate recipes, using fresh, quality and seasonal products
Details of the course :
You will learn to cook 2 different dishes. As a starter, you will cook jumbo shrimp raviolis, with Espelette pepper, in lobster sauce. As main dish, you will learn how to make a duck fillet in Bordelaise sauce, with mushroom royale, and seasonal vegetables. From the month of October, the jumbo shrimps season ends. This starter will be replaced by scallops on a jerusalem artochoke puree, squid ink tiles, ans coral emulsion.
You will learn all cooking techniques of both recipes You will shell raw Dublin prawns, and learn how to make the sauce from the shells. As far as the scallops are concerned, you will shell and clean them yourself, and learn how to cook them the right way. We will teach you to make a jerusalem artochoke puree, squid ink tiles, and coral emulsion, to add on to this amazing dish.
As far as the main course is concerned, you will make a Bordelaise sauce based on veal stock and red wine. (you won’t make the veal stock, but we will explain how to make it). You will pan fry a duck fillet on its skin with rosemary. We will teach you how we like to eat them in France, and you will learn the way of cooking them. You will make a mushroom royale, and will cook seasonal vegetables. All this in 3 hours.

Course schedule
You can invite friends and family to join you for dinner, to taste together the meal you would have prepared, for an extra 22€ per person.
After your booking, you will receive our confirmation e-mail and one of our chef will call you to confirm your reservation within 48h of your booking. He will check with you what materials you have at your location and what may need to be brought. He will also explain any additional information around the course.
